Sweet Success: Homemade Cake Pops Made Easy

A fun way to celebrate any event is by making cake pops! I made some using vanilla cake, strawberry frosting, and white chocolate for decoration. The recipe I used was completely homemade—no box cake mix or canned frosting.

Ingredients for Vanilla Cake
3 2/3 cups cake flour
1 teaspoon salt
2 teaspoons baking powder
3/4 teaspoon baking soda
1 1/2 cups unsalted butter
2 cups granulated sugar
3 large eggs + 2 egg whites
1 tablespoon vanilla extract
1 1/2 cups buttermilk
Directions
1. Prepare the Cake
Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan.
In a bowl, whisk together the dry ingredients (cake flour, salt, baking powder, and baking soda) and set aside.
In a stand mixer or with a handheld mixer, cream the butter, sugar, eggs, egg whites, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet mixture and mix until you get a smooth, thick batter.
Pour the batter into the prepared cake pan and bake for 23–26 minutes.
Allow the cake to cool completely while you prepare the frosting.
Ingredients for Strawberry Frosting
A few fresh strawberries, stems removed
Splash of water
1 cup powdered sugar
Pinch of salt
1 teaspoon vanilla extract
Directions for Frosting
Place strawberries and a splash of water in a small saucepan over medium heat.
Cook until the strawberries release their juices (a red liquid).
Mash the berries with a fork and continue cooking until most of the water evaporates.
In a separate bowl, combine powdered sugar, salt, and vanilla extract.
Stir the cooled strawberries into the powdered sugar mixture.
Assemble the Cake Pops
Crumble the cooled cake into a large bowl until it forms tiny crumbs.
Shape the cake crumbs into golf-ball-sized balls and place them on a baking sheet.
Spread frosting around each cake ball to help them hold their shape.
Allow the cake pops to dry completely.
Once dry, your cake pops are ready to eat!
